Instructions:
To prepare the chicken:
- Blend garlic, shallots and bird's eye chilies in a food processor until it becomes a fine paste.
- Add salt, sugar, tamarind paste, turmeric powder and coriander powder into the paste and blend it well.
- Use the marinade to coat the chicken and let it sit for at least 30 minutes in the fridge.
- Heat up cooking oil in a wok or pan and fry the chicken until golden brown and cooked through.

- Blend garlic, shallots, bird's eye chilies and tomato in a food processor until it becomes a fine paste.
